Spicy Kashmiri Pulao


Ingredients:
1 cup basmati rice
1 onion, sliced
2-3 green chillies, slit lengthwise
shahjeera, cloves, cinnamon sticks, bay leaves to temper
1-2 tsp ginger garlic paste
1 cup mixed vegetables (carrot, peas, green beans, corn)
1/2 cup chopped fruits (chopped apples, pineapples)
1 tsp chopped cashewnuts
1-2 tsp raisins
1/4 tsp cardamom powder

Method:
  • Heat ghee in a kadai. Temper the garam masala.

  • Saute onions till they turn golden brown.

  • Add green chillies and ginger garlic paste.

  • Mix in the vegetables.

  • Fry the soaked basmati rice for less than a minute.

  • Pour 2 cups of milk and sprinkle salt.

  • Cook rice till done. Dont overcook it.

  • Heat ghee in a kadai and brown cashews and raisins.

  • Transfer rice to a serving dish and mix in the fruits, raisins and cashewnuts.

  • Sprinkle cardamom powder

    This was really good ! May be you can go a little less on the spice, but the spice and the sweet complimented each other very well !
