Alu Palak Pulao

Ingredients
1 cup basmati rice
2 cups milk or coconut milk
3/4 bunch palak leaves
1/4 cup peas
1 potato(small), diced
1 onion
1 tomato (optional)
saunf, cinnamon sticks, cloves
1 tsp ginger garlic paste
2-3 green chillies
oil

Method
  • Blanch palak.

  • Blend them in a mixer.

  • Heat oil and splutter the garam masala.

  • Saute onions till golden brown.

  • Add ginger garlic paste and green chillies.

  • When you get a good aroma add diced potatoes and fry for a while.

  • Then add the peas followed by the blended palak.

  • You can also add tomato for a tangy taste.

  • Allow the mixture to boil for a while till the raw smell leaves.

  • Season with coriander powder and salt.

  • Then add Basmati rice and fry for a while.

  • Add water or milk or coconut milk as per the ratio to the cups of rice added.

  • Adding milk and coconut milk makes the dish taste richer.

  • Sprinkle salt. Add a tbsp of ghee as a final touch.

  • You can also add cubed and fried paneer pieces at the end or even shredded paneer.

  • This rice is green in color, is healthy but hides the palak taste.
